Food Friday Fail: Macaroni and Cheese

You’re reading the title correctly….Original Diva has not ever made creamy macaroni and cheese from scratch that was tv worthy.  I’ve only ever attempted it twice.  When the holidays come around my cheesy contribution to the menu is a broccoli and rice casserole.  Thanksgiving 2007 I made the macaroni and cheese for my in-laws and it was enough for them to decide to keep me around.  That was attempt #1.  After having some mac and cheese from the salad bar at Whole Foods last Friday for dinner, with Farafala, I decided to try again.  This time I was going to make a grown up version.  I was giddy as all get out when I came across some gruyere in the grocery store.  I asked the young woman cutting up cheese behind the tasting square on advice on what to mix it with.  I walked away with gruyere, fontina, and some aged NY cheddar…..and some milk.  I won’t even waste the time or space to tell you how I made it because I’ve looked at recipes and there was soooooooooooooooooooooo much missing from mine.  I WILL tell you that at least one of those cheeses is extremely oily and stringy instead of creamy.  So instead of smooth macaroni and cheese with creamy sauce, I had chunks of stringy cheese that quickly hardened when it cooled and a pan full of mess that I threw away.

I won’t even MENTION the prosciutto…….sigh.

    There are so many recipes for mac and cheese out there. I was amazed at some of the stuff they are doing with it these days. I know you’ll have grown mac and cheese success soon!
