Good Monday Morning.  Thanks for all of the advice and tips you guys gave me regarding planning and making arrangements.  I appreciate it.

 

This weekend my grandmother had a big dinner for my uncle’s birthday (which is Wednesday).  There was turkey, dressing, mashed potatoes and gravy, macaroni and cheese, broccoli, chocolate cake, and yellow cake.  The yellow cake was mine.  I’m taking a cake decorating class and I called my uncle (my favorite uncle) and told him that I’d make him a birthday cake and decorate it for last week’s project.  He loved the idea…….then he called me back to remind me that he’s diabetic and the cake has to be sugar free.  I have NEVER made a sugar free cake before.  So off I went to splenda.com and found a pretty decent recipe for a yellow cake.  I’ll have to post the picture I took of all my ingredients later (when I post the actual recipe).  Let me tell y’all now….I was nervous as hell cause the batter tasted like crap.  You know how diet sodas have that after taste?  The cake batter had the same thing.  YUCK!  I guess the buttercream frosting cut that out a little though cause it was actually pretty good.  I packed it up and headed down to my grandmother’s for the day and put my cake on the table like I had no shame.  Everyone ate a slice.  My uncle even packed it up and took it back home with him.  I travelled back home with just an empty cake carrier.

How was the class?  AWESOME!  Want to see my creation?

I didn’t put any thought into how I wanted to decorate my cake ahead of time.  The only stipulation is that we had to use the stars and zig zags that we learned how to make in class.  And that light blue….I mixed that up right there in class.  Next week I will be more prepared though.  I’ll have more colors prepared and a design in mind.  My classmates came in with full 130 piece kits, patterns, and colors.  Check it out….
